Between the seaside atmosphere, fresh markets, and warm local vibes, learn to cook two of the country’s most iconic dishes: thiéboudienne, the national symbol made with fish and fragrant rice, and mafé, a rich stew prepared with peanut paste. The session begins with an introduction to local ingredients: broken rice, fresh vegetables (cassava, carrots, sweet potatoes, eggplant), coastal fish, peanut paste, mild spices, herbs, and traditional condiments.
The group learns about the characteristics of each ingredient, regional variations, and the differences between urban, coastal, and rural cuisine.
The first dish prepared is thiéboudienne, in its red or white version depending on the day’s catch:

• preparing the nokoss (pounded spice blend),

• cooking the rice infused with all the flavors.
You then continue with mafé, a comforting and very popular Senegalese dish:
